Spaghetti with Garlic, Red Pepper and Olive Oil

When my husband and I were first married and didn’t have much money I would often throw things together for meals. Sometimes these things were hits and others were misses. One of my favorite hits was simple spaghetti mixed with “butter”, garlic and parmesan. Not the good parmesan though, the stuff that comes in the green can and even at that it wasn’t Kraft. It was some generic version they sold at the commissary. Oh and that garlic was garlic powder, the at the time 50cent a bottle garlic powder. The butter well it was margarine. I remember eating it one day when my sister and her now ex-husband came over and he thought it was the the weirdest thing. Then again he was from Albuquerque, New Mexico so if it didn’t have green chiles it was weird.

The simple spaghetti was something quick and easy I could put together and became comfort food. I even taught my oldest how to make it but now our ingredients are a little different. Now I use real butter, parmesan  and garlic. While working with Barilla this month I was introduced to a even more grown up version of this simple dish and I was hooked. Heck, my whole family was to the point they were fighting over it. Thank goodness I can get gluten free pasta and Barilla makes a pretty good gluten free pasta so I can continue having this for a quick lunch or dinner.

Spaghetti with Garlic, Red Pepper and Olive Oil

Ingredients

  • 1 (16 ounce) box Barilla PLUS® Thin Spaghetti
  • 1/3 cup extra virgin olive oil
  • 3 cloves garlic, sliced
  • 1/3 cup chopped fresh parsley
  • 1/4 teaspoon red chili pepper flakes
  • 1/4 cup Parmigiano-Reggiano cheese, freshly grated Parmigiano-Reggiano cheese, freshly grated

Directions

  1. Bring a large pot of water to a boil.
  2. Heat olive oil in a large skillet over medium heat. Add garlic, parsley and red pepper flakes; saute 2 to 3 minutes.
  3. Cook Plus® Thin Spaghetti according to package directions.
  4. Drain pasta, reserving 1/2 cup pasta water. Immediately add hot pasta to skillet. Stir in reserved pasta cooking water. Mix well. Add cheese and toss lightly.
  5. Transfer to a serving platter or bowl.

Mind Blowing Johnsonville One Pan Italian

Who here loves Italian sausage? We do! I always have some in my freezer. My family loves it, heck they love sausages of all types not just Italian sausage. Breakfast links, biscuits and sausage gravy, kielbasa, bratwurst… they love it all.  I incorporate it into all sorts of our favorite dishes from jambalya, lasagna to spaghetti. Tonight I found a new go to spaghetti recipe. I was looking at the Johnsonville Sausage recipe collection on Allrecipes.com and told myself no way this recipe is too easy! First the recipe for Johnsonville’s One Pan Italian had less than 5 ingredients. Sausage, sauce, spaghetti and water all ingredients that can be adjusted to your own taste. I can cook the whole meal in one pan. No boiling water, no strainer, just one dish. Plus it is ready in less than 30 minutes! I am sold and I was ready to try this recipe out!

It started this easy. Less than 5 ingredients!

Johnsonville One Pan ItalianA pan, a box of spaghetti and a package of italian sausage. We like Hot italian sausage but the original recipe calls for mild sausage. I chose to skip a step instead of uncasing the sausages and used the ground .

Brown the sausage and then drain off the grease.

Johnsonville One Pan ItalianNext add 1 jar of sauce and 3 cups of water. I like to add water to the sauce jar to make sure I get all of the saucy goodness out.

Johnsonville One Pan ItalianBring the sausage/sauce mix to a boil  and break spaghetti (I used a full box) in half and simmer for about 10 minutes.  Most of the water will be absorbed as the noodles cook.

  • 1 (19.76 ounce) package Johnsonville® Italian Mild Sausage Links, casings removed                                                                                **note** any variety will work and ground sausage can be used instead of links*
  • 1 (26 ounce) jar your favorite pasta sauce
  • 3 cups water
  • 8 ounces uncooked spaghetti, broken in half                                                                                                                                                                        **note** I used full 14.5ounce box of spaghetti*                                                                                                                                                                            Directions
  1. In a large skillet, add sausage, breaking into bite-sized pieces. Cook over medium heat until browned and no longer pink; drain. Add pasta sauce and water; bring to a boil. Add spaghetti. Simmer, uncovered, for 8-10 minutes or until spaghetti is tender, stirring often.
