Parmesan Garlic Cauliflower Mash

I’m a veggie girl. I have always been one. One of my grandma’s favorite stories about my childhood was eating dinner and me patiently waiting for everyone to be done and asking to finish the vegetables. Yeah, I was a weird kid. I loved all of those veggies that you hear of kids hating, broccoli, spinach, lima beans, cauliflower, and more. Even today, I have gone through vegetarian periods while my husband has been away. My husband on the other hand was anti-vegetable when we first married but has started to learn to love veggies now that he is in his thirties.  One of those vegetables is Cauliflower.

I serve cauliflower on a regular basis in our house. Usually I serve it raw, steamed or roasted but sometimes I mash it. I always forget about how good cauliflower mash is and I was reminded again this month while working with Allrecipes and Swanson. This month one of my Allrecipes Allstar activities was to make, review and take pictures of various Swanson recipes and one of the ones I chose was their Parmesan Garlic Cauliflower Mash and I am glad I did. It was delicious and super easy to make!

Parmesan Garlic Cauliflower Mash | Country Girl Gourmet

It honestly couldn’t be any easier. You take a head of cauliflower and cut into florets add to a pot with garlic and chicken broth. For the broth, while I am a huge fan of making my own chicken broth sometimes I use prepared and Swanson now has unsalted broth which I loved! I’m not a fan of overly salted dishes. You have to let the flavor of the food come through and the unsalted broth does just that!

Once you have your ingredients in the pot bring it to a boil, cover, reduce heat and cook for 15 minutes, drain reserving broth and mash adding broth, butter and parmesan. You can also season with some salt and pepper and then voila you have an awesome and easy to make side dish in less than 30 minutes! Add it to some roast chicken and maybe some green beans or broccoli and you have yourself a delicious and nutritious meal.

Ingredients
  • 4 cups cauliflower florets
  • 1¼ cups Swanson® Chicken Broth
  • 4 cloves garlic, peeled and smashed
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon butter
Instructions
  1. Heat the cauliflower, broth and garlic to a boil in a 10-inch skillet over high heat. Reduce the heat to medium. Cover the skillet and cook for 15 minutes or until the cauliflower is tender.
  2. Mash the cauliflower mixture in the skillet and stir in the Parmesan cheese and butter. Season to taste.

12. Potato Soup

This soup is a favorite of my family! It is easy to make and simmers in the crockpot all day. I knew this recipe needed to be on my blog after sharing it with friends and they all agreed it is delicious!

11.New York City Lox and Schmear Bagel in a Bite

A year ago I developed this recipe for RITZ and I have to say the schmear is simply delicious! I have made the schmear much more than just for the super bowl in the past year! It goes well with gluten free crackers too.

10. Gluten Free Corn Casserole

My family LOVES corn casserole and now that I am gluten free I knew I needed to come up with a gluten free version. This recipe is perfect! I have fed it to others who had no clue they were eating something gluten free.

9.RITZ Country Fried Ribs with Zesty Buttermilk Ranch Dressing

This is one of the recipes that made it into the top 12 that really surprised me. Who would have thought to bread and fry ribs? My family assured me they were delicious!

8. Faux Mashed “Potatoes”

This recipe came from my husband deciding to be Paleo. His Paleo lifestyle only lasted  a couple months but I still make this recipe. It is a keeper!

7.Gluten Free Eggplant Parmesan

This Eggplant Parmesan came out of a craving I had and has become a family favorite since! There is no frying of the eggplant either. This eggplant is breaded with gluten free cracker crumbs and then baked.

6. Crockpot Pumpkin French Toast Casserole

This crockpot breakfast has been a hit on my blog since I first blogged about the recipe in 2012.

5.Buckeyes

Who doesn’t like chocolate and peanut butter? You don’t have to be from Ohio to enjoy this treat or wait until Christmas to make them. We love Buckeyes year round! They are among my families favorite sweet treats.

4. Spinach and Strawberry Salad

This is my favorite salad! As long as I can find decent priced strawberries I always have the ingredients to make this salad on hand.

3.Cinnamon Rolls

Cinnamon Rolls or as my family calls them Sweet Rolls are a family tradition and this recipe makes a perfect cinnamon roll. These are one food I dearly miss now that I am gluten free. My goal in 2015 is to venture into the world of gluten free yeast breads so who knows a gluten free version of these may be coming in the future.

 

2.Gluten Free and Paleo Almond Flour Pancakes

These aren’t your typical pancake but they work in a pinch! They are perfect if you are gluten free or paleo.

 

1. Roasted Spaghetti Squash

…and the #1 recipe! This post going viral really surprised me! Roasted spaghetti squash is a staple in my diet.  Yes, there are other ways to prepare spaghetti squash but they don’t taste as good as roasted spaghetti squash.

Healthy Dinner Ideas with Mazola

It’s no question that I am big into feeding my family healthy dinners. My track stars cannot fuel themselves on junk just as I cannot fuel myself on junk while training for a half marathon. As a result of my healthy eating and exercise I have low blood pressure and beautiful blood work to include high HDL Cholesterol levels which are considered protective against heart disease. This month with Allrecipes we are working with Mazola Corn Oil and they have asked us to make two great healthy recipes, Pork Carnitas with Cilantro Tomatillo Sauce Sweet and Spicy Salmon with Grapefruit Salsa.  With some adjustments both recipes were perfect Healthy Dinner Ideas that my family enjoyed.

The first recipe I tried was the Pork Carnitas with Cilantro Tomatillo Sauce.

This recipe calls for the carnitas to be cooked on the stove top but I cooked them in the crockpot instead and they came out perfect. After searing the meat I cooked them for 6 hours on low (note- crockpot times vary and I know mine cooks hot) The cilantro tomatillo sauce is more of a salsa than a sauce. I added lime juice and a couple of dashes of garlic salt and it was perfect for us. Definitely something we will be having for dinner again.

Next up was the Spicy Salmon with Grapefruit Salsa. This recipe I did have to change more than I normally would for a sponsored activity but we were assured this was ok.  My substitutions were boneless skinless chicken breast for the salmon and instead of the grapefruit salsa  I made a cucumber salsa. Grapefruit interacts with a lot of different medications from heart medications to hormone replacement. So while this meal is heart healthy if you are on any medications you may want to double check and see if your medication has a grapefruit warning.

The rub on the chicken was perfect and my family really enjoyed it. The cucumber salsa became a new favorite of ours as well. Spicy Chicken with Cucumber Salsa | Country Girl Gourmet

Cucumber Salsa

adapted from Spicy Salmon with Grapefruit Salsa

  • 2 cups diced seeded diced cucumber (2 decent sized cucumbers)
  • 1/3 cup chopped red onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno pepper, seeds removed and finely diced
  • 2 cloves garlic,minced
  • juice of 1 lime
  • garlic salt, to taste

1.Combine all salsa ingredients  and refrigerate and allow flavors to meld.

2.Serve with chicken/salmon. Great with tortilla chips too!
