1977 was an awesome year. Yes, it was absolutely awesome and I say this not just because it was the year I was born but because it was also the year Star Wars™ was released. The movie has a following that rivals others. Most everyone has seen it, those that have not somehow never seen it are questioned and then told they need to see it. Interventions will be done so that they do see it. It’s a movie that parents share with their children, introducing it to a new generation. Star Wars™ has become a must watch classic for all ages. Everybody seems to love it for their own reasons and many hold some very strong opinions and will debate which movie was the best. I’m not sure i’m ready to enter that debate here. We have it all the time in my house. We are HUGE Star Wars™ fans around here.  From it being the classic story of good versus evil to the characters in the different movies we all love the movie and we are super excited for the newest movie Star Wars™ movie, coming out in December. If only I had a dollar for every time one of my kids has said they want to go see it as soon as it comes out, I would be a rich women.  Yes, son we will go see the movie, just not the moment it first comes out. Since i’m going to make my inpatient children wait I have been thinking of things we can and should do before going. I think the number one thing on the list is watching the movies for our family fun night. I think a Star Wars™ marathon is a must! Then in the morning  I will have a quick breakfast ready and we could go making the first viewing in the morning. Well try, there are 6 of us and getting out of the house on time came be challenging. Having breakfast made ahead of time so everyone can grab and go will probably be the best option for my crew so I came up with Galactic Munch Mix  that i’m pairing up with some Star Wars™ Go-Gurt.

Going grocery shopping for my Galactic Munch Mix at Walmart I knew I had to get some Star Wars™ Darth Vader Cereal and incorporate it somehow and then I saw the Honey Nut Cheerios® . That lovable bee, Buzz, was now dressed up for Star Wars™. Plus there was a toy in the box too. I was instantly transformed to being a little girl wanting the cereal with the cool toy in the box. The fact that it was a Star Wars™ toy just made it that much better.

How could I not buy them? So in my cart they went! I continued wandering the store and came across the Star Wars™ Go-Gurt and decided they would be perfect with my Galactic Munch Mix. My breakfast idea was coming together.

Once I was home Lil Miss helped me put together my first batch of Galactic Munch Mix. Well she was there when I first opened up the Honey Nut Cheerios® . I think she really only wanted the Star Wars™ toy because she grabbed it and disappeared, looking for light. The toy was a space robot viewer with a scene from the newest movie! I will be buying more Honey Nut Cheerios® just for the viewers. I need want them all and i’m sure my kids do too!

I let my daughter and youngest son go back to fighting over playing with the toy and I went back to work. I had some Galactic Munch Mix to make. I gathered up my ingredients and went to work.

My Galactic Munch Mix is a combo  of Honey Nut Cheerios® , Star Wars™ Darth Vader Cereal, Graham Cracker bites, Lightly Salted Almonds and Chocolate Covered Cranberries covered in an easy homemade caramel sauce.
I start the recipe off by making the caramel sauce. I use salted butter to help balance out some of the sweetness or maybe it is to enhance the sweetness, it just helps makes it yummy. If you add 1/2 teaspoon of sea salt to the recipe you will have a good salted caramel too. I add butter, brown sugar and corn syrup to a heavy bottomed saucepan and cook it on medium heat until it comes to boil. I then remove it from the heat and stir in the vanilla.

In a large bowl I add the cereals and all of the mix ins. I then pour the caramel sauce in and mix well making sure everything is well coated.

Next I pour the cereal mix onto a cookie sheet and bake it for 30 minutes.

After  the first 15 minutes I give the mix a good stir. The Star Wars™ Darth Vader Cereal marshmallows may melt a little but that is ok.

When the cereal mix is done baking I remove it from the cookie sheet and spread it out on wax paper and let it cool.

Once cool I break up large chunks and  add the chocolate covered cranberries and mix them in.

Then all is left is to bag it up so my kids can grab and go in the morning.

My first batch of galactic trail mix disappeared fast. My kids and husband all loved it. The combo of the Galactic Munch Mix and Star Wars™ Go-Gurt has worked well on busy school mornings. I am thinking it is going to be perfect for Saturday morning when we are trying to get out of the house in a hurry to get to the movie theater giving us one less thing to worry about on our way to see the movie. Quick and easy breakfasts that all of my kids like are always a winner for me! My kids can focus on other things that morning like what they want to dress up as. A debate that they have been having the last few weeks.

  • 6 Cups Honey Nut Cheerios®
  • 2 Cups Star Wars™ Darth Vader Cereal
  • 2 Cups Graham Cracker Bites
  • 1 Cup Almonds
  • 1 Cup Chocolate Covered Cranberries
  • ½ Cup Salted Butter
  • ¾ Cup Corn Syrup
  • 1 Cup Brown Sugar

  • *optional ½ teaspoon sea salt*
Instructions
  1. Preheat the oven to 275 degrees.
  2. Pour the cereals, graham cracker bites and almonds into a large mixing bowl.
  3. In a heavy bottomed saucepan, cook butter, brown sugar and corn syrup on medium heat until it begins to boil. Remove from heat and stir in vanilla. Pour over top of cereal, graham crackers and almonds. Toss gently to coat the cereal.
  4. Spread the coated cereal out on a greased baking sheet.
  5. Bake at 275 degrees for 15 minutes and then stir.Return to oven and bake for another 15 minutes.
  6. Cool the cereal mixture completely spreading onto waxed paper. Once cool place in a large bowl and add the chocolate covered cranberries. Toss to combine.
  7. Store in an airtight container or portion into ½-1 cup servings in resealable sandwich bags.

I have to tell you something about my family, they are peanut butter monsters. Each and every one of them. It is insane the amount of peanut butter my family goes through in a month. I sometimes wonder if my family has peanut butter running through their veins they eat so much of it. With eating the quantities that we do there are always debates. Like the basic Creamy, Crunchy or both? Regular peanut butter or honey peanut butter? Which peanut butter is the best peanut butter? My husband and I have seriously stood in the aisle comparing labels for a good twenty minutes trying to figure that last one out. Then I discovered a new peanut butter, Peter Pan Simply Ground Honey Roast at Walmart.

I fell in love with it. I shared some with Lil Miss and Mr Great when we made Peanut Butter Monster Rice Cakes but I want to keep the rest to myself. Would it be that bad if I hid it for myself?

So what makes this peanut butter so special? Peter Pan Simply Ground Honey Roast is “creamy with a BIT OF CRUNCH.” It’s not smooth but at the same time it is not a traditional crunchy peanut butter. It is similar to the texture of freshly ground peanut butter. I really like the texture. It is perfect just spread on a rice cake, my go to pre- long run breakfast to just dipping some Honeycrisp apple slices in.

Thinking about my favorite things to eat with peanut butter with I came up with a great snack idea for my kids, Peanut Butter Rice Cake Monsters. When my boy’s were younger I was always trying to come up with cute snack ideas for school. By the time it is my daughters turn most of these ideas are old news and she wants something different. Halloween is coming up so I knew I had to get to work for her class halloween party so I started brainstorming and came up with an idea that combines some of my favorite things and lets her play with her food. To top it off it is a healthy snack. Can you say win-win?

 These monsters are somee of the easiest things to make. All you need is Peter Pan Simply Ground Original Honey Roast, Rice Cakes and your favorite food. Raisins, chocolate chips, nuts and pretzels could be used also if desired. Get creative with it!

  • 1 Rice Cake
  • 2 TablespoonsPeter Pan Simply Ground Original Honey Roast (or more depending on your taste)
  • your favorite sliced fruit, berries, nuts, dried fruit, chocolate chips
Instructions
  1. Prepare fruit for topping rice cake. If using apples, toss with lemon juice to prevent browning.
  2. Evenly spread 2 Tablespoons (or more) of peanut butter on a rice cake.
  3. Create monster faces with your favorite fruit, berries, nuts, dried fruit and chocolate chips.

One of the many things that my kids do that makes me beam inside with proudness is when my kids show the world how caring they are. They do this in a multitude of ways from simply being helpful and nice to each other to helping out friends and others. It is one of the many ways I know that I must be doing something right.  The day I watched my oldest son buy something for his friend (without asking me for money, if he could or should) was an eye opening moment. Maybe it shouldn’t have been because kids learn by example and I have tried to be a good one for my kids. They have always known that mommy volunteers and is a helper. It is how I try to make the world a better place. Whether it be a random act of kindness to giving a friend a surprise gift, you never know how your action may be that one thing that turns their no good, horrible day around. After all who doesn’t love Cheerios ™?  It was the first finger food of many kids. I know I fed my kiddos the wholesome goodness of Cheerios ™ and always had a baggie full in my diaper bag for them for while we were out and about. Heck, I think my kids sometimes survived on them. They loved them! My kids didn’t just eat them though. They were perfect for potty training to give my boys some potty time target practice.They were perfect for working on fine motor skills and we would make necklaces with them looped on. When learning letters we even glued them onto paper in the shapes of different letters. The things you could do with them were endless!

Once I had gone to Walmart and bought my box, I needed to decide who to give my special code to.  I decided to give my code to Brandy from Glue Sticks, a fellow Social Fabric blogger. I hope she likes the gift and it brightens her day a little bit! With a big family like mine I have a feeling it might. I know cereal never lasts that long around my house. My boys, especially my oldest, can polish off a single box in one sitting if we aren’t watching!

A bowl of cereal on school days is a rarity around my house though. Breakfast tends to be grab something quick and go. Making sure my daughter gets to elementary school, my other son middle and the oldest to high school can be a juggling act some mornings so I have gotten creative in the kitchen. I created Dark Chocolate Cherry Almond Cheerios ™ Bars. They have the wholesome goodness of Cheerios ™ with the added protein of almonds and a bit of sweetness. They have become my kids new, on the go favorite breakfast!

The recipe is pretty simple. I mix Honey Nut Cheerios ™ with sliced almonds, chia seed and dried cherries and set it aside while I cook the mix that holds the bars together.

The glue that holds the bars together is a combination of honey, brown sugar, almond butter and vanilla extract. You cook the honey and brown sugar together until the brown sugar has dissolved. Then you remove from the heat and add the almond butter and vanilla and combine well.

Carefully pour the hot almond butter mix into the cereal mix and stir well, making sure everything is well coated.

Pour into a prepared pan and evenly spread out.

Top with melted dark chocolate.

Place pan in the refrigerator and allow to cool 1-2 hours. When cool  remove from pan and cut into bars. I typically can get 12 bars.

My kids now have a grown up way of eating Cheerios™ that they love! I have made them several times now with and without chocolate to the same reaction, “can I have more?” I am planning on making up some more real soon. Dark Chocolate Cherry Almond Cheerios ™ Bars

Ingredients
  • 4 cups Cheerios
  • ½ cup Dried Cherries
  • ½ cup sliced almonds
  • 1 Tablespoon Chia Seed
  • ½ cup Honey
  • ¼ cup Brown Sugar
  • ½ cup Almond Butter
  • 1 teaspoon Vanilla paste (or extract)
  • 1 10oz bag of Dark Chocolate Chips
Instructions
  1. Line 8x8 square pain and cover with foil. Lightly spray with cooking spray.
  2. Mix Honey Nut Cheerios ™ with sliced almonds, chia seed and dried cherries and set aside.
  3. Cook the honey and brown sugar together until the brown sugar has dissolved.
  4. Remove from the heat and add the almond butter and vanilla and combine well.
  5. Carefully pour the hot almond butter mix into the cereal mix and stir well, making sure everything is well coated.
  6. Pour into prepared pan and evenly spread out.
  7. Melt Chocolate chips in the Microwave in a microwave safe boil. Stirring every minute until melted.
  8. Top cereal mixture with melted dark chocolate.
  9. Place pan in the refrigerator and allow to cool 1-2 hours. When cool remove from pan and cut into bars.

Healthy Multigrain Chia Waffles

It’s a new year and so many people out there have made resolutions to get healthy which is awesome! Being healthy isn’t just a diet, it is how you live your life and making changes as needed for a healthier life. I am all about being healthy. Many of my friends know that I eat all sorts of weird foods like, chia seeds. Chia is awesome in my books and it isn’t just for sprinkling on top of your yogurt or smoothies when you have breakfast. How about adding some chia to your morning waffles?  Chia is wonderful in waffles and these Healthy Multigrain Chia Waffles are a great way to start your day. Just add some real maple syrup and your favorite berries, no butter needed at all.

Healthy Multigrain Chia Waffles

Ingredients
  • cooking spray
  • 1¾ cups milk (cow's milk or almond milk)
  • ½ cup unsweetened applesauce
  • 1 egg, beaten
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1¼ cups gluten free all purpose flour
  • ½ cup gluten free rolled oats
  • ¼ cup flax seed meal
  • 4 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 2 teaspoons white sugar, or more to taste
  • ¼ teaspoon salt
Instructions
  1. Preheat a waffle iron according to manufacturer's instructions; spray the inside with cooking spray.
  2. Whisk milk, applesauce, egg, chia seeds, and vanilla extract together in a bowl; let sit until chia seeds start to thicken the mixture, about 2 minutes. Whisk flour, oats, flax seed meal, baking powder, sugar, and salt into almond milk mixture until batter is smooth.
  3. Scoop ½ cup batter into the preheated waffle iron and cook until crisp and golden, about 5 minutes per waffle. Repeat with remaining batter.

Gluten Free Banana Nut Bread by PAM®

One of my husband’s favorite things to eat is banana bread. Unfortunately for him I don’t make it that often because my monkeys love banana’s. Something weird happened at my daughters birthday though. None of the girls ate the bananas and then my kids didn’t touch them either. Next thing I knew they were too brown for the kid’s. So what do you do with brown banana’s? Make banana bread of course!

This month with Allrecipes I was also working with PAM®, a kitchen staple in my house as their product works perfectly to keep things from sticking. They have a wonderful banana nut bread recipe that looked like I could easily make gluten free so I went to work. The Banana Nut Bread recipe has no sugar and uses honey as a sweetener instead. I was intrigued. Many quick bread recipes are loaded with sugar and some are simply too sweet. The only way around this is to play with the amount of sugar or try sugar substitutes and hope for the best. Using honey instead of sugar was a welcome change and ultimately a delicious change. The banana bread was not as sweet as most other banana bread recipes but not as sweet is not a bad thing. This banana nut bread recipe has a good ratio of sweet to balance with the banana that turns it into something special.

Make up a batch of this Gluten Free Banana Nut Bread yourself the next time you find yourself with some banana’s that are a bit too ripe! You won’t be disappointed!

Ingredients
  • PAM® Original No-Stick Cooking Spray
  • 1¾ cups Gluten Free All Purpose Flour Blend
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup honey
  • ¼ cup Pure Wesson® Canola Oil
  • 2 eggs or ½ cup Egg Beaters® Original
  • 3 medium very ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • ¼ cup chopped pecans
Instructions
  1. Preheat oven to 350 degrees F. Spray 9x5-inch loaf pan with cooking spray; set aside. Stir together flour, xanthan gum, baking soda, cinnamon and salt with wire whisk in medium bowl; set aside.
  2. Stir together honey and oil in medium bowl until well combined. Add Eggs or Egg Beaters; mix well. Add banana and vanilla; mix well. Blend in flour mixture and nuts. Spread batter in prepared pan.
  3. Bake 55 to 60 minutes or until wooden pick inserted in center of loaf comes out clean. Cool in pan on wire rack 20 minutes before removing from pan. Store leftovers in airtight container up to 3 days.

Maple Pumpkin Spice Granola with Chia and Quinoa

It is the first day of fall so i’m bringing you a great fall recipe! Fall brings so many great things especially to the food world. Soups, stews, comfort food galore, apples and pumpkin, yes pumpkin! We love pumpkin in our house and while I keep pumpkin in my pantry year round there is just something about eating it during the fall and it appears i’m not the only person who thinks that either. Other than Starbucks Pumpkin Spice Latte have you been to a grocery store and have seen all the pumpkin spice goodies they have now? It can be a bit overwhelming but at the same time really tasty.

While the world is on pumpkin spice overload there are still a few things that have not found a pumpkin spice version so I decided to make my own. My kid’s and I are addicted to granola. While it is easy to make I kept picking up bags of our favorite brand and it was devoured in no time at all. So I decided to save my $4 a bag and make my own, pumpkin spice flavored of course and it was delicious!

If you like granola and pumpkin spice this is the granola for you! Plus I added all sorts of other goodies to it like quinoa and chia seeds to add to the nutrition factor. Just don’t tell my kids that it is healthy.

Maple Pumpkin Spice Granola with Chia and Quinoa

Ingredients

  • 2 cups Rolled Oats
  • 1/2 cup Ground Flax Seed
  • 1/4 cup Quinoa
  • 2TB Chia Seed
  • 1/2 cup Pumpkin Puree (canned or fresh)
  • 1/2 cup Pure Maple Syrup
  • 1T Cooking Oil (canola, coconut, etc.)
  • 2t Vanilla Extract
  • 1 1/2 t Cinnamon
  • 1/2t Nutmeg
  • 1.2t Ground Ginger
  • 1/2t Cloves
  • 1/2t Salt

optional add in’s include your favorite nuts (such as pecans, almonds, pumpkin seeds etc.) and dried fruit (such as craisens and dried cherries). I have a kid in braces so I leave these things out.

Directions

  1. Preheat the oven to 300 degrees . Line a large baking sheet with parchment or aluminum foil.
  2. Combine the oats, ground flax seed, quinoa, chia seed and nuts (if you are including them) in a large bowl. Stir in pumpkin puree, maple syrup, honey, oil, cinnamon, nutmeg,cloves,salt and vanilla in a saucepan and coat oat mixture well. Spread the mixture out evenly on the baking sheets.
  3. Bake for 1 hour in the preheated oven, stirring  at 30 minutes. Due to differences in ovens  bake until toasted and crispy.
  4. Let cool completely before storing in an airtight container. Dried fruit can be added once the granola has completely cooled also.

Cinnamon Vanilla Granola (Gluten Free)

I have been gluten free for 6 months now and one thing I have learned to do is read label well. There is often gluten in things that you wouldn’t think would have gluten. Many times it is easier to make your favorite store-bought foods so you can know exactly what is in what you are eating with the added bonus of it tasting better.   Granola is now on my list of foods to make myself instead of buy. I have wanted to make granola for a while now and it falls into the category of some are gluten free while other’s aren’t. It is also one of the foods I look at when I am grocery shopping but always put back saying I can make this at home. I am so glad that I finally made it. It is easy to make and taste even better. My family loved it too! We ate it plain and in yogurt parfaits with some fresh local blue berries I picked up at Gillis Hill Road Produce.

Cinnamon Vanilla Granola

Cinnamon Vanilla Granola

Ingredients
3 cups old-fashioned oats
2 cups quick oats
1 cup chopped pecans (or sliced almonds or sunflower seeds)
1/2 cup ground flax meal
1 cup maple syrup, you can use less if desired but may have less clumping
2 tablespoons Mazola® Corn Oil
2 tablespoons pure vanilla extract
4 teaspoons ground Cinnamon
1/2 teaspoon ground nutmeg
1 cup dried cranberries (or raisins or other dried fruit)

*note* Use real Maple Syrup not “pancake syrup” such as Log Cabin or Aunt Jemima.

Directions

  1. Combine old fashioned oats, quick oats, pecans and wheat germ in a large bowl. Combine maple syrup, oil, vanilla, cinnamon and nutmeg in a small bowl. Pour over oat mixture, stirring to coat. Spread mixture evenly on greased baking sheet.
  2. Bake at 300 degrees F for 50 to 60 minutes, stirring once midway through baking minutes, until oats are toasted.
  3. Remove from oven and stir in dried fruit. Cool in pan on wire rack. Store in airtight container.
  4. Serving suggestion: To make yogurt parfaits, layer 6 ounces vanilla yogurt, 1/2 cup mixed fresh or frozen fruit and 1/4 cup granola.

Johnsonville Amazing Muffin Cups

Easter is almost here! Although it is later this year how can it be that it is time for Easter already? I know many people who are having their oh crap moments and wondering what are they going to do for the day.  From putting together Easter baskets to planning Easter Brunch and dinner. This year I can say I am thankful for Johnsonville Sausage.  If you have read some of my other social media postings  then you may already know that my family loves Johnsonville Sausage. It is seriously some awesome sausage.  Well, I have discovered yet again another Johnsonville recipe that my family loves and it is perfect for Easter brunch! Johnsonville’s Amazing Muffin Cups are the perfect addition to any Easter brunch. They have a base of hash browns that are topped with sausage, cheese, red pepper, green onions and eggs. Sounds pretty good, huh?  Add some fresh fruit and you are all set to go with an amazing Easter brunch.

Amazing Muffin Cups

Ingredients

  • 12 links Johnsonville® Original breakfast sausage
  • 3 cups frozen country style shredded hash brown potatoes, thawed
  • 3 tablespoons butter, melted
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 eggs, lightly beaten
  • 2 cups shredded 4-cheese Mexican blend cheese
  • 1/4 cup chopped red bell pepper
  • chopped fresh chives or green onion

Directions

  1. Prepare sausage according to package directions. cool slightly and cut into 1/2-inch pieces; set aside.
  2. In a bowl, combine hash browns, butter, salt and pepper; divide evenly into 12 greased muffin cups. Press mixture onto sides and bottom of muffin cups.
  3. Bake at 400F for 12 minutes or until lightly browned. Remove from oven, divide sausage pieces into muffin cups.
  4. In a bowl, combine eggs, cheese and bell pepper. Spoon mixture evenly into muffin cups. Sprinkle with chives or onion. Return to oven, bake 13-15 minutes or until set. Serve.

Simple Waffles for a Snow Day

Snow Day a term that brings joy to children, well until they hear the words make up day. Here in North Carolina we are having an unusual winter and just had our second good snow fall of the winter. Schools have been out since Tuesday and it has snowed at some point everyday. Where I live we have had over 6 inches of snow and then some sleet and freezing rain on top of it. There is plenty of snow on the ground for good snow day fun. Between breaks in the snow and sleet kids have been out  building snow forts and snow men, having snow ball fights and sledding.

My kids even asked to go for a hike so we went for a short one on snow day 2.

Then on snow day 3 I decided to take my camera out with me as I did just over 2 miles. I’m tapering for the Disney Princess Half Marathon and a hike in the snow and ice was definitely a workout.

One thing I can say about snow days is that kids need their fuel for hours of outdoors fun. You have to start your day out right with a good breakfast. I like to make my kids a nice warm breakfast and my Simple Waffles are perfect for snow day mornings like we have been having. Simple Waffles are just that. They are made from simple ingredients and cook up beautifully. I’ve had my recipe for years and I always come back to it. It is our families favorite and I hope it becomes your families favorite too!

Simple Waffles

Ingredients

  • 4 eggs
  • 3 1/2 cups milk
  • 1/2 cup oil
  • 2TB honey or Brown Sugar
  • 2 tsp cinnamon
  • 4tsp baking powder
  • 1/2tsp baking soda
  • dash of salt
  • 3 cups flour

Direction

  1. Preheat waffle iron.
  2. In large bowl mix together flour,baking soda, baking powder, salt and cinnamon.
  3. In separate bowl beat eggs and mix in honey, oil and milk
  4. Pour wet mixture into flour mixture  and mix well forming a smooth batter.
  5. Spray waffle iron with cooking spray.
  6. Pour or laddle batter onto waffle iron.
  7. Cook per manufacturer’s directions or golden brown

* These waffles freeze nicely and reheat well in the toaster*

Gluten Free and Paleo Almond Flour Pancakes

Not a new years resolution but this month I decided to do a trial of the gluten free diet to see if it would help with some of my autoimmune issues. My husband has been doing a modified paleo diet and our family eats a pretty healthy diet, I was ready. So far I am 2 weeks down and I am doing ok. I have to admit though I have had some crazy cravings. Add to that it isn’t that much fun watching your family eat things that are so delicious when you can’t eat them also. So I have started searching for gluten free substitutes. There had to be a solution and there was.  There are a wide variety of gluten free flours that you can by and I am slowly starting to experiment with them. First up has been Almond Flour. A year ago I made some Paleo bread for friends along with some macaroons but that is where my experience with almond flour ends. I was unsure if I could really turn almond flour into pancakes and if I did how they would turn out. I was happily surprised. These pancakes were quick and easy to make and delicious. They were denser than a typical pancake but that is to be expected with the almond flour. Try them for yourself!   • 1 cup almond flour
  • ¼ cup water
  • 2 eggs
  • 1 tablespoon maple syrup
  • ¼ teaspoon salt
  • 1 teaspoon oil, or as needed
Instructions
  1. Whisk almond flour, water, eggs, maple syrup, and salt together in a bowl until batter is smooth.
  2. Heat oil in a skillet over medium heat; drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip, and cook until browned on the other side, 3 to 5 minutes. Repeat with remaining batter.
