Oh school days and the morning rush to get out the door. Part of that morning rush is getting a good breakfast in the kiddos to start their day off right. There are many options out there for breakfast  but I try to keep things homemade as much as I can. I have begun to make my own freezer breakfasts. Quick, simple and delicious breakfasts that are made ahead of time and kept in the freezer  until ready to be warmed up for breakfast. This week with labor day the school week starts on Tuesday and my kid’s will be starting their school week with a great Turkey Tuesday recipe from Butterball. We love turkey in our house and it can be used in a variety of different ways. Turkey bacon is used in the recipe I am sharing today. You know it will be good, how can something with bacon be bad?

Turkey Bacon Breakfast Burrito

Step One. Fry up some beautiful Butterball turkey bacon. When done drain on paper towels, cool and then crumble and set aside.

Next you want some eggs. You will need a big bowl and 16 large eggs. Just crack them into the bowl and whisk up. Add to a preheated skillet and cook. Set aside when done.

The next step you can do a couple different ways. My way was to mix everything together. The eggs, beans, bacon and cheese. You could also layer. Completely up to you.

I prepared each breakfast burrito on a piece of plastic wrap that I rolled each burrito in.

After rolling the burrito up and wrapping in plastic wrap, I placed burrito’s in a ziploc freezer bad and labeled the bag.
To reheat just microwave 2 minutes or until done.
*please note not all microwaves cook the same, yours may reheat food faster or slower. Adjust accordingly.*

So there they are beautiful Turkey Bacon Breakfast Burrito’s! Don’t forget to top them with your favorite things like salsa, sour cream, avocado and even a sprinkle of cilantro.

Turkey Bacon Breakfast Burrito

3 tablespoons vegetable oil

1 (14 ounce) packageButterball® Turkey bacon, cooked and crumbled

16 large eggs

8 (10 inch) flour tortillas, warmed

1 (16 ounce) can seasoned chili beans, warmed

1 cup shredded Cheddar cheese

1 large avocado, halved, pitted, peeled, diced

1 cup chopped cilantro

2 cups salsa or pica de gallo

1 cup sour cream

  1. Heat oil in skillet over medium heat. Add eggs to skillet. Cook, pulling cooked portion to the center. Add bacon and continue cooking until eggs are firm. Remove from heat.
  2. To assemble burritos, evenly portion heated beans down center of each tortilla. Top beans with egg mixture, cheese, avocado and cilantro. Fold in opposite sides of each tortilla, and then roll up, burrito-style. Cut diagonally in half and serve with salsa and sour cream
