Chocolate Espresso Cookies

Ingredients
  • ½ cup Butter
  • 1½ cups Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Espresso Powder
  • ½ cup Cocoa Powder
  • 1 cup Flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 4 ounces melted dark chocolate
  • 4 ounces dark chocolate chips
Instructions
  1. In a bowl cream together Butter and sugar until fluffy.
  2. Beat in eggs, vanilla and cooled melted chocolate.
  3. Combine the flour, cocoa, espresso powder/granules, baking powder, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips.
  4. Refrigerate dough in the refrigerator for a minimum of 2 hours.
  5. Preheat oven to 350.
  6. Drop by rounded teaspoons onto a parchment lined baking sheet
  7. Bake for 14-15 minutes
  8. Cool and then enjoy!
