Almost like Grandma's Zucchini Bread
  • 2 Eggs
  • ½ cup Oil (vegetable, canola)
  • ½ cup Applesauce
  • 2 cups Sugar
  • 2 teaspoons Vanilla Extract
  • 3 cups Gluten Free All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 3 cups Grated Zucchini
  1. Grease two 8 x 4 inch loaf pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, and baking soda together in a bowl.
  3. Cream together Sugar, oil and applesauce in a large bowl. Then beat in eggs and vanilla.
  4. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until well combined.
  5. Pour batter into prepared pans.
  6. Bake for 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
