An awesome and easy to make Gluten Free Corn Casserole. Sure to become a family favorite!

Ingredients
  • ⅔ cup gluten free all-purpose flour
  • ½ cup yellow cornmeal
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon xantham gum
  • 1 (15 ounce) can corn, drained
  • 1 (14.75 ounce) can creamed corn
  • 1 cup sour cream
  • ½ cup butter, melted
  • 1-2 cups shredded cheddar or cheddar-jack cheese
Instructions
  1. Preheat oven to 350 degrees F.
  2. Combine first 6 ingredients in a bowl, mix well.
  3. Add can of corn and can of creamed corn, sour cream, and melted butter. Mix well.
  4. Pour into a greased 9x13 pan/dish and bake uncovered for 45 minutes. Remove from oven and sprinkle with desired amount of cheese 1-2 cups. Bake for another 10-15 minutes until cheese has been melted.
