It doesn’t seem possible but it’s that time of the year again, Back to School. While many schools have already headed back there are many more that are enjoying their last days of summer break. My kids are in that later group. With under two weeks to go until school starts I have been trying to get thing  ready for when the kids go back to school. I’m not just talking about buying new clothes, school supplies, and fresh hair cuts either. We are slowly working at getting back to our school time schedule and figuring out things like what to eat for breakfast. My boys have all decided what they want but my daughter is another story. She changes what she eats every couple weeks it sometimes so I need a breakfast boredom buster for her so I’ve come up with some Easy Breakfast Fruit Pizzas.

I have bought Eggo waffles for years. They have always been a great grab and go breakfast for school days. As a mom, I love that they are not only quick and easy but there is so much that you can do with them outside of just covering them in maple syrup. During the school year, they are a staple in my freezer.

As a mom to 4 school age kids that is more than a bit frugal, I can really appreciate the discount. I don’t know about you but I easily spend well over $100 on school supplies for my kids. I love Crayola products too! With 4 kids you learn which arts and crafts supplies to buy and which not to buy. Nothing like a 3 year old having a meltdown because his crayon won’t color. I love being able to help my kids spark their creativity so we stick to Crayola products.

Easy Breakfast Fruit Pizzas are another way I’m sparking my kid’s creativity. Fruit pizza is a great dessert but it can be completely transformed into a breakfast my daughter can help put together. All you need to do is look at some of your breakfast favorites in a different way. Eggo waffles make the perfect base for the fruit pizza and are ready in minutes. Then all you need is some greek yogurt and your favorite fruit. Since everything is better with sprinkles, granola, nuts or even mini chocolate chips are great to sprinkle on top too!

To create our breakfast fruit pizzas I start with preparing the fruit. This can even be done while your favorite Eggo waffle is in the toaster. I went a little fruit crazy to give my daughter a rainbow of options.

Once the waffle has popped from the toaster and the fruit is all sliced it is time to get creative.

First, you add your greek yogurt.

Then you top with your favorite fruits and “sprinkles” letting creativity lead the way.

My daughter absolutely loved making her breakfast fruit pizzas. I also love knowing that she has a healthy breakfast that will keep her fueled, full and creative until lunch time when she will get a break to refuel. Now we just need school to start. Until then she has Eggo and Crayola Activity Book that I downloaded for her to do to keep her creativity going as summer vacation comes to an end. With Crayola and Eggo fueling mind and body who knows what she will create!

How do you transform your Eggo waffles?

Easy Breakfast Fruit Pizzas

Ingredients
  • 1 Eggo Waffle (any variety)
  • ¼ cup Greek Yogurt (any variety, we like vanilla)
  • Sliced Fruit and Berries
  • *optional "sprinkles" Granola, sliced almonds, coconut, mini chocolate chips
Instructions
  1. Toast Eggo Waffle as per package instructions.
  2. Spread ¼ cup Greek yogurt on toasted waffle.
  3. Top and decorate with favorite sliced fruit. Sprinkle with granola or other optional "sprinkles" if desired.
  4. Enjoy!
